Ingredients

For Marinade:

4 chicken breasts
3/4 cup The Honest CowTM cottage cheese
3/4 cup yogurt
1/2 cup olive oil
2 cloves garlic
2 tablespoons red wine vinegar
2 teaspoons dried oregano
1 teaspoon salt

For Sauce:

1/4 cup The Honest CowTM cottage cheese
3 tablespoons milk
2 ounces feta cheese
1 small clove garlic
Juice of 1 lemon
1/2 teaspoon dried oregano
1/2 teaspoon salt

To Serve:

Lemon wedges

How to
  1. With a sharp knife parallel to the cutting board, butterfly each chicken breast, cutting all the way through to create 2 thin pieces per chicken breast. Place chicken in baking dish.
  2. Prepare marinade by blending marinade ingredients together in a food processor or blender. Pour over chicken breasts and stir to coat evenly.
  3. Cover chicken and refrigerate overnight.
  4. To cook chicken, preheat grill to 400°F. Wipe excess marinade from chicken breasts and place on grill. Let cook 4-5 minutes, then flip and cook another 2-3 minutes or until a thermometer placed in the chicken reads 160°F.
  5. Remove chicken from grill and let rest 5 minutes while you prepare the sauce.
  6. Blend all sauce ingredients together in a food processor.
  7. Serve with grilled chicken and a lemon wedge.
