Ingredients

8 large eggs
1 cup The Honest CowTM cottage cheese
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 cup shredded Gruyere cheese
4 strips cooked chopped bacon

How to
  1. Preheat oven to 375°F.
  2. Line a muffin tin with 12 silicone baking cups or paper liners.
  3. Add eggs, cottage cheese, salt, and pepper to a food processor or blender, and mix until smooth.
  4. Stir in the bacon and cheese and divide egg mixture evenly between baking cups.
  5. Bake for 15-20 minutes, or until egg cups have puffed up slightly and are no longer wet on top.
  6. Let cool 5 minutes before enjoying.

 

Egg bites can be covered and stored in the refrigerator for an easy microwavable breakfast throughout the week.
